Andrew King is an athlete who is always on the go.  When ReadyWise asked him what he looks for in a meal for all his high-output activities he challenged them to make a high calorie protein packed vegetarian meal.  As pretty much a full time international traveler we wanted to make something that would reflect a meal that might touch on a few of the many flavors he has had the chance to experience around the world. 

What ReadyWise created for Andrew is a Thai Style Coconut Cashew Curry with Chickpeas & Aromatic Rice. You do not have to be a vegetarian to enjoy a meal this tasty but it's good they were able to make something that fits into the vegetarian adventure lifestyle.
